Here is a recipe for a basic clean-out-of-the-fridge type of meal, perfectly tender and with so much flavour.
Ingredients
2 cup broccoli florets
2 cups cremini mushrooms
2 cups chopped butternut
1 red bell pepper, chopped
1 red onion, chopped
2 tablespoons olive oil
2 tablespoons balsamic vinegar, or more, to taste
Marina Braai salt with garlic
1 1/2 teaspoons dried thyme
Marina Lighthouse pepper, to taste
Direction
1. Preheat the oven to 200 degrees. Lightly oil a baking sheet or coat with non-stick spray.
2. Place broccoli florets, mushrooms, butternut, bell pepper, and onion in a single layer onto the prepared baking sheet. Add olive oil, balsamic vinegar, and thyme, and season with the braai salt and pepper, to taste. Gently toss to combine.
3. Place into oven and bake for 12-15 minutes, or until tender.
4. Serve immediately.
