Ingredients:

  • 4 cups mashed potatoes (prepared in advanced)
  • 1 cup shredded cheddar cheese
  • 1/2 cup finely chopped green onions
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup grated parmesan cheese
  • 2 large eggs
  • 1 cup breadcrumbs (for coating)
  • Marina Lighthouse Salt and Pepper
  • Marina Coriander Braai Salt
  • Vegatable oil for frying

 

Instructions:

  • Start with four cups of creamy mashed potatoes. Season them to taste with the Marina Lighthouse Salt and Pepper and Marina Coriander Braai Salt. Ensure that the mashed potatoes are well-cooled befre proceeding to the next step.

 

  • In a large bowl, combine the mashed potatoes with shredded cheddar cheese, chopped green onions, crumbled bacon, and grated parmesan. The combination of these ingredients adds layers of flavour and a delightful texture to the potato balls.

 

  • Take two tablespoons of mashed potato mixture at a time, roll it into compact balls using your hands. Ensure they are well-formed to prevent any mishaps during the frying process. Set up a classic three-step coating assembly line. Place the breadcrumbs in one bowl, beat the eggs in another, and leave the third one empty.

 

  • First, roll each potato ball in the empty bowl. This dry coating helps the egg adhere to the potato ball. Then, dip each ball into the beaten eggs, ensuring an even coating. Finally, roll the ball in breadcrumbs until fully coated.

 

  • Place the coated potato balls on a tray and allow them to chill in the refrigerator for at least 30 minutes. This step helps the balls hold their shape during frying.
