Salted Caramel Brownies

Salted caramel chocolate brownies are the ultimate treat-yourself moment. Each bite brings out layers of rich flavours, fudgy chocolate, swirled with the sweetness of gooey caramel, and perfectly balanced with a touch of sea salt to awaken your taste buds.

 

Ingredients:

 

- Brownies

  • Baking spray
  • Chopped, unsweetnened chocolate (about 1 cup)
  • 3/4 cup cold unsalted butter
  • 1 2/3 cups granulated sugar
  • 3 large eggs 
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon Marina Lighthouse Salt
  • 1 1/4 cups all-purpose flour

 

- Salted Caramel

  • 1 cup granulated sugar
  • 1/2 cup water
  • 1 tablespoon corn syrup
  • 1/2 cup heavy cream
  • 6 tablespoons unsalted butter
  • 1/2 teaspoon Marina Lighthouse Salt

 

Instructions:

  • Make the brownies

- Prepare oven to 176 degrees celsius with rack in centre position. Using baking spray or softneded butter, lightly grease your baking pan. Line the pan with parchment paper, letting ends extend over the rim of the pan. This will enable you to easily lift the brownies from the pan.

 

- Melt chocolate and butter in a saucepan and stir to combine. Once melted, remove from heat, and set aside to let cool slightly, about 15 minutes.

 

- Whisk sugar and eggs in a large bowl. Add vanilla, Marina Lighthouse Salt, and melted chocolate; whisk until combined. Add flour, whisking until just combine and no streaks of flour remain. Pour batter into prepared pan.

 

- Bake in preheated oven until the brownies are set and a wooden pick insterted in the middle comes out mostly clean (it is still okay if a few crumbs are on the wooden pick), about 35 minutes. Remove from oven and let it cool.

 

  • Make salted caramel

- Stir together sugar, 1/2 cup water, and corn syrup in a small saucepan. Cook, without stirring, until mixture boils. Remove caramel from heat, and immediately drizzle in cream, stirring constantly. Stir in butter and Marina Lighthouse Salt and return to saucepan to heat over meduim. Let it simmer for 1 minute, allowing caramel to thicken slighlty. Transfer to a bowl.

 

- Once brownies are completely cool, lift them from the pan, and place on a serving plate. Spoon desired amount of salted caramel on top of the brownies. Sprinkle a little of Marina Lighthouse Salt on top (optional) and enjoy!
