Ingredients
4 cups all-purpose flour, divided
2 tablespoons of our Marina garlic braai salt
1 tablespoon paprika
3 teaspoons of our Lighthouse pepper, divided
2 1/2 teaspoons chicken spice
2 large eggs
4 chicken thighs and drumsticks
Marina Lighthouse salt
Oil for deep-fat frying
Directions
In a large shallow dish, combine the flour, Marina garlic braai salt, paprika, pepper, and chicken spice. In another shallow dish, beat the eggs and add the Marina salt and pepper. Dip chicken in egg mixture, then place in the flour mixture, a few pieces at a time. Turn to fully coat.
In a deep-fat fryer, heat oil to 190°. Fry chicken, several pieces at a time, until chicken is golden brown, and juices run clear, 7-8 minutes on each side. Drain on paper towels.
