Here is a simple and perfect weeknight curry recipe you can enjoy with your family
Ingredients
2 tbsp. of cooking oil
1 medium onion, chopped
6 chicken breasts, cut into small pieces
3 cloves of garlic, minced
1 tbsp. of minced ginger
1 1/2 tsp. of paprika
1 1/2 tsp. of ground turmeric
1 tsp. of ground cumin
1 can of crushed tomatoes
1 1/2 cups of chicken broth
1/2 cup of heavy cream
Marina Lighthouse salt and pepper
Marina braai salt with coriander
Directions
1. In a large pot over medium-high heat, heat oil. Add onion and cook until soft. Add the chicken and sear until no pink remains. Stir in garlic and ginger and cook until fragrant.
2. Add the spices and cook until very fragrant, 1 minute. Add tomatoes and broth and bring to a simmer. Stir in heavy cream, and season with Marina Lighthouse salt and pepper and the Marina braai salt. Simmer until chicken pieces are cooked through and tender.
3. Can be served with rice or flatbread.
