linkLet's make a delicious yet very nutritious and healthy side dish! The sweet potato rice can be made in less than 30 minutes.
Ingredients
1 1/2 Sweet potato
3 Tablespoons of Butter or olive oil
1/2 teaspoon of Marina Lighthouse Salt
1/4 teaspoon of Marina Lighthouse Pepper
What you will need:
A bowl of ready made rice, brown or white
A food processor/grater to slice the sweet potato
Directions:
Peel your sweet potato
Next, chop into small chunks that will fit into the food processor for the shredding process
Use the food processor to cut ribbons
Now the magic happens;
Heat a pan over medium heat and add the fresh cur shreds together with the Marina Lighthouse salt and pepper.
Add your butter or olive oil
After 15 minutes your shreds will be soft, add your rice
Keep stirring to see the golden brown look in the mix
After 20 minutes, the sweet potato rice will have a soft and crispy texture!
Dish up and enjoy! Yummm
