Malva Pudding: A South African Delight

Ingredients: 

 

For the pudding: 

- 1 cup flour 

- 1 cup granulated sugar 

- 1 tablespoon apricot jam

- 1 teaspoon baking soda

- 1 teaspoon white vinegar

- 1 pinch of Marina Lighthouse Salt 

- 2 large eggs 

- 1 cup milk 

 

For the sauce: 

- 1 cup heavy cream 

- 1 cup granulated sugar 

- ½ cup butter 

- ½ cup boiling water 

- 1 teaspoon vanilla extract 

 

Instructions: 


1. Preheat your oven to 180 degrees celsius and grease a baking dish. 

2. In a mixing bowl, cream together the butter and sugar until light and fluffy. 

3. Add the eggs one at a time, beating well after each addition. Stir in the apricot jam. 

4. In a separate small bowl, dissolve the baking soda in the vinegar. It will fizz, so be prepared for that reaction. Add the vinegar mixture to the butter and sugar mixture and stir well. 

5. Sift the flour and salt into the mixing bowl and gently fold it into the wet ingredients. Gradually add the milk and mix until you have a smooth batter.

 

6. Pour the batter into the greased baking dish and smooth the top with a spatula. 

7. Bake in the preheated oven for 35-40 minutes or until the pudding is golden brown and skewer inserted into the center comes out clean. 

8. While the pudding is baking, prepare the sauce. In a saucepan, combine the cream, sugar, butter, boiling water, and vanilla extract. Heat the mixture over medium heat, stirring constantly, until the sugar has dissolved and the sauce has thickened slightly. 

9. When the pudding is done, remove it from the oven and immediately pour the hot sauce over the hot pudding, allowing it to soak in. 

10. Let the pudding rest for a few minutes to absorb the sauce before serving. 

 

Serve the Malva Pudding warm with a scoop of vanilla ice cream or a dollop of whipped cream.
