Homemade Milk Tart with Tennis Biscuits

Ingredients: 

For the crust: 

- 1 pack of Tennis biscuits

- ½ cup unsalted butter, melted 

 

For the filling: 

- 4 cups whole milk 

- ½ cup of sugar

- ½ cup flour 

- 4 large eggs

- 1 teaspoon vanilla extract

- A pinch of Marina Lighthouse Salt 

 

For the topping: 

- Ground cinnamon 

 

Instructions: 

1. Prepare the crust 

- Begin by crushing the tennis biscuits until they form fine crumbs. You can do this using a food processor or by placing the biscuits in a sturdy plastic bag and crushing them with a rolling pin. 

- In a medium-sized bowl, mix the crushed biscuits with the melted butter until fully combined. The mixture should resemble wet sand. 

- Press the biscuit mixture into the base and sides of a 9-inch pie dish, creating an even layer. You can use the back of a spoon to smooth it out. Place the pie dish in the refrigerator to set while you prepare the filling. 

 

2. Create the creamy filling: 

- In a saucepan, heat the milk over medium heat until it just starts to simmer. Avoid bringing it to a boil.

- In a separate bowl, whisk together the sugar, flour, eggs, vanilla extract, and a pinch of salt until smooth and well combined. 

- Slowly pour the egg mixture into the saucepan with the warmed milk, whisking continuously to prevent any lumps from forming. 

- Continue stirring the mixture over medium-low heat until it thickens to a custard-like consistency. This should take about 8-10 minutes. Be patient and keep stirring to avoid burning the mixture. 

- Once thickened, remove the saucepan from the heat and let the custard cool for a few minutes. 

 

3. Assembling the milk tart: 

- Take the prepared pie dish from the refrigerator and pour the slightly cooled custard filling into the biscuit crust. Spread the filling evenly using a spatula. 

- Sprinkle a touch of ground cinnamon over the top of the tart for that classic South African flavour. 

- Allow the milk tart to cool completely at room temperature beforre refrigerating it for at least 2 hours or until set. For the best results, refrigerate it overnight to enhance the flavours. 

 

Once the milk tart is chilled and set, slice into wedges and serve to your eager guests. Enjoy the taste of  South Africa in every delicious bite!
