There's something incredibly comforting about a steaming bowl of beef stew on a chilly evening. The combination of tender beef, flavourful vegetables, and aromatic spices creates a harmony of tastes that warms both body and soul. Ingredients: 

  • 1kg of stewing beef, cut into bite-sized cubes
  • 3 tablespoons of olive oil
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 4 carrots, peeled and sliced into thick rounds
  • 3 celery stalks, chopped
  • 3 medium-sized potatoes, peeled and cubed
  • 2 tablespoons of flour 
  • 4 cuos of beef broth
  • 1 cup of red wine (optional)
  • 2 bay leaves
  • 1 teaspoon of dried thyme 
  • 1 teaspoon of paprika
  • Marina Lighthouse salt and pepper to taste
  • Chopped fresh parsley for garnish 

 

Instructions: 

 

Heat the olive oil in a large pot over medium-high heat. Add the beef cubes in batches and brown them on all sides. Remove the beef from the pot and set it aside. 

 

In the same pot, add the diced onions and minced garlic. Sauté them until they turn translucent and release their fragrant aroma. 

 

Sprinkle the flour over the onions and garlic, stirring well to coat. Cook for another minute to allow the flour to cook and eliminate any raw taste. 

Slowly pour in the beef broth and red wine, if using, while stirring continuosly. This will create a flavourful base for the stew. 

 

Return the browned beef to the pot, along with the bay leaves, dried thyme, and paprika. Season generously with the Marina Lighthouse salt and pepper according to your taste. 

 

Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef becomes tender and starts falling apart. 

 

Add the carrots, celery, and potatoes to the pot. Stir everything together, making sure the vegetables are submerged in the liquid. Continue simmering for an additional 30 minutes, or until the vegetables are cooked through and tender. 

 

Taste the stew and adjust the seasoning if necessary. Remove the bay leaves before serving. 

 

Ladle the rich and aromatic beef stew into bowls, garnish with chopped parsely if desired and serve hot. Accompany it with crusty bread, pap or fluffy mashed potatoes for a satisfying meal.
